Hominy, Hominy, Hominy!

I’ve missed you guys! This week our food challenge item was hominy.

Unfortunately, hominy always reminds me of menudo. Menudo, and its resident stomach intestines, makes me a little queasy. Therefore, I was a little bummed at the prospect.

A fellow challenger made grits which were absolutely delicious and inspired a version which I will post later this week, however, I wanted to do something soupy. Perhaps to counteract my menudo retching? Strongly perhaps.

What happened was a mild, bisque-ish concoction with vegetables and lots and lots of flavor. No muss, no fuss, no gagging. Don’t think I’ll be making it again, though.

Canned Goods
What I Used
“chicken” TVP
3 bunches green onions, sliced
2  tsp garlic, minced
1/2 cup dry TVP
1/2 cup water
1 tsp bouillon

3 tbsp olive oil
4 tsp ground cumin
2 1/2 tsp sweet paprika
2 cups veggie broth
1 15 oz can okra, tomatoes and corn (refer to picture. you can add them seperately. I was being lazy)
1 zucchini, chopped
Prepared TVP
45 ozs hominy in juice

What I Did

Heat up the oil over medium to high heat. Saute the green onions until they’re soft and yummy. Add the tvp, water and bouillon. Cook until the liquid is absorbed and the tvp is browned. While this is cooking, throw the hominy with the juice in the blender or food processor along with the spices. Blend until it is smooth and creamy. Pour into a large pot. Add the okra, tomatoes and corn, the chopped zucchini and the tvp. Heat through, or until the zucchini is tender, 15-20 minutes.


Food Challenge #3: Zucchini Through a Straw

I was not that kid sitting at the table for hours refusing to eat her vegetables. Even when it was one of my most hated dishes, like spicy cabbage (I deplored anything with even the mildest hint of pepper) or collard greens, I ate them, though quite begrudgingly. I was the kid requesting beets and rice or steamed broccoli and butter or zucchini and squash. Yes, I was the strange kid who’d rather eat zucchini and squash and liver and onions instead of pizza. Might explain a lot about me.

Anyway, I love zucchini. Always have, always will. I’ve made zucchini bread, sautéed zucchini, mixed it in salads and soups. What could I possibly do to liven up this lovely vegetable that I haven’t already done?! It was hard to come up with some thing that no one had done. I wracked my brain for about a week. zucchini fritters? Been done, here here and Rachel Ray even made them for America. Zucchini brownies? Nope. Been done. For the love of god! Zucchini burgers? Nope, that’s been done a bazillion times as well. It felt like everything had been covered and zucchinified.

I was tired. Tired of thinking and literally, just tired. After working hard in a new yoga class, I had no energy to fight with kitchen utensils, and that’s when it hit me: make a smoothie.Zucchini Pic

Unfortunately, I’m no more brilliant than this person or this person, however I do feel like I got a bit daring with this one. I added sweet potatoes AND zucchini to my fruits for a thick, filling, delicious fruit storm!!

Zucchini Smoothie 2It wasn’t an HBO original special (or maybe it was just LIKE an HBO original special!), but it did the trick, got me outside of my zucchini box, and also gave me another quick way to get a filling meal with veggies and fruits all at once! I think this one’s a score for me!
